- Pat chicken breasts dry with paper towels. Mix chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, pepper, and cayenne in a small bowl. Rub olive oil over the chicken, then coat evenly with the spice blend.
- Heat a large skillet over medium-high heat. Cook chicken 6 to 7 minutes per side until the internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes, then slice or shred.
- While the chicken rests, whisk together sour cream, lime juice, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add water one tablespoon at a time until the dressing is pourable but still thick. Stir in cilantro if using.
- Spread chopped romaine across a large serving bowl. Layer on black beans, corn, cherry tomatoes, red onion, and avocado, keeping each ingredient in its own section.
- Arrange the sliced or shredded chicken on top. Sprinkle with shredded cheese and tortilla strips.
- Drizzle dressing over the salad or serve it on the side. Add any optional toppings and finish with a squeeze of fresh lime juice. Serve immediately.
Notes
Store all components separately for meal prep. The chicken keeps up to 4 days refrigerated. Add avocado fresh before serving to prevent browning. Rotisserie chicken is an excellent shortcut — shred and warm briefly in a pan with the spice blend. For a low-carb version, skip the corn, beans, and tortilla strips and add extra avocado.
